Most health departments have classified certain food products as "high risk, potentially hazardous foods." These foods allow the rapid growth of micro-organisms that can lead to problems such as food poisoning. So, even if you have someone in your organization that bakes the world's best cheesecake you should not offer it at a bake sale. The following is a list of home-prepared foods that generally should not be sold at bake sales. Do not sell baked goods that need to be kept either cold or warm. Do not sell home-canned or jarred food such as jams, jellies, vegetables, pickles, salsas, flavored oils and vinegars, and the like. Do not sell egg-based pies or custard pies - such as pumpkin pie, meringue pie, and cheesecake. Do not sell products filled or topped with pudding, whipped cream or custard. Do not sell products made with cheeses, or cheese based products - such as cream cheese frostings, cheesecake or cheese danishes. Do not sell home-made ice cream.
